Egg White Snacks

These are so incredibly easy and  huge hit at my house! Once they are made, they do not last long in my house, however, they do keep well and are easily re-heated.   So, make a bunch and have an easy, healthy, go-to snack.  When I made this batch I used only red peppers, onion, and spinach but you can use what ever veggies you’d like.  You can also do a variation on the egg whites, if you want to do eggs and add a yolk or two to add some fat, feel free.

Ingredients:

1/2 red pepper, diced

1/4 onion, diced

Handful of spinach

Egg white (I used the carton, about 24T)

Olive oil cook spray

Black pepper

 

What to do:

Preheat oven to 350, spray your muffin pan with olive oil cook spray.  Fill your muffin cups with the veggies then pour the egg whites over and sprinkle the pepper on as desired. For mini muffin tins, cook for 10minutes, double that for regular size muffin tins.

We like to top ours with sliced avocados and a touch of salsa.

Viola! You have a healthy, high protein, low fat snack, or mini-meal.
