Fluffy Peanut Butter Dip

fluffy PB dip w: applesI am always up for trying new recipes, some work out well and others need work.  My latest was absolutely DELISH right off the bat.  First, let me explain how much I love peanut butter and almond butter.  Peanut butter is heavenly on most anything 🙂 One of my favorite snacks is apple slices dipped in peanut butter.  Every once in a while I will get a wild hair and try new concoctions.  As I was preparing my snack I realized I needed a little extra protein for the day and one of my go-to snacks for that, is greek yogurt.  So, I decided to whip peanut butter and plain greek yogurt together. I taste tested it and it needed a little something…vanilla. Vanilla extract makes everything it touches yummy.  After a teaspoon of vanilla and a small packet of stevia, we were ready to rock!

Now, here is where it gets interesting…at least for me.  Recently I have had a few clients ask me about powdered peanut butter and I always thought, “Why? Why mess with a good thing?”  Yes, powdered peanut butter is significantly less in fat but really, we need fat in our diets so why not get it from a good source like peanut butter?  These are rhetorical questions.  To be a good nutrition coach and to widen my horizons, I investigate powdered peanut butter. I picked some up my local Sprouts called Just Great Stuff Organic Powdered Peanut Butter.  The only ingredients are organic peanuts, organic coconut sugar, and sea salt, so actually pretty good.  I did not much care for it by itself but man-o-man, when I mixed into my greek yogurt with the vanilla and stevia, it was YUM!  If you are looking for a lower fat, lower calorie version, the powdered peanut butter is a great substitution.

8oz (1 cup) or greek yogurt

1 Tbsp of regular peanut butter or 1.5 Tbsp of the powdered

1 tsp of vanilla

1 packet of stevia

1 sliced apple
