Healthy Banana Bread

Is there such a thing? The word healthy and bread in the same title, occasionally, yes.  Or maybe I should just say healthier banana bread.   I have been baking banana bread for years in my home and every once in a while I’ll tinker with the recipe to make it a little healthier.  Most of the time it is not a success because of how the ingredients have to work together.  Sometimes it was a brick that i pulled out of the oven while other times it was so bland nothing could help it. Until now.  I came across a recipe I really liked and after a few tinkers I have landed on a recipe that I really enjoy, tastes good, is a healthier option and most importantly my kids love it.IMG_1985

My kids do not like bananas with spots on them so we always seem to have bananas that don’t make the cut so they get relegated to the smoothies or bread stash.   I like to wait until my bananas are very brown and full of sweetness.

What you need:

1 cup of Sugar ( I prefer brown sugar, and have used coconut sugar and love it)

1/2 cup Coconut Oil

2 Eggs

1 cup Mashed Bananas (approx. 3 bananas)

1/2 cup Greek Yogurt (I use Fage 0%)

IMG_19861 tsp Vanilla (I actually do not measure and just pour in a good amount, I love vanilla)

1-1/2 cups Spelt Flour (I did use coconut flour once and it worked great)

1 tsp Baking Soda

1 tsp Cinnamon (I am gracious with this as well)

What to do:

Preheat oven to 350F. Grease and flour botton only of a 9×5 loaf pan.  In a large bowl, beat together sugar and oil.  Add eggs, bananas, greek yogurt and vanilla.  Blend well.  Lightly spoon flour into a measuring cup, level off and then add to the mix.  Add baking soda and stir until dry ingredients are moistened.  Pour into prepared pan.

Bake 350F for 50-60 minutes or until toothpick inserted into the center comes out clean.  Cool for 5 minutes.  Remove from pan.  Cool completely, wrap tightly and store in refrigerator.

Makes 1 loaf.
